Hummingbirds


I have been camping with my dad, sister and our children for the last few days. We went to Mitchell RV park in Perrin, Texas, it was the fourth year to go and the first without my mom. It was an emotional time, but we all had a great time. My dad stayed for the rest of the weekend for the Bluegrass Festival. While we were there I took pictures of some Hummingirds. They are such amazingly tiny little creatures. There was a joy in my heart watching those small little birds hang in midair while they ate from the feeders. God created them and us for a specific purpose. No matter how small or how big the purpose is important. We are important to him in our grief and our joy. My mom loved watching Hummingbirds and she made a delicious dessert called Hummingbird cake (it did not contain any Hummingbirds!). In her honor, here is her recipe...



Humminbird Cake

(Navae Ledbetter)

1 box Yellow Duncan Hines Cake mix

1 tsp cinnamon

4 beaten eggs

1/2 cup water

1/2 cup oil

6 ounce can crushed pineapple- not drained

3 mashed bananas



Bake in a 9X13 pan or bunt pan at 350



Icing...

1 1/2 cup sifted powdered sugar, add milk to create spreading consistency.
